SUMMER SQUASH
Yellow and Zucchini Squash
Excalibur says these particular varieties of Summer Yellow Squash are the best to Dry:
- Crookneck
- Pattypan
- Early Straightneck
The Squash should have good color and shape as well as meaty and young. I find Squash easy and fast to Dehydrate. You should:
- Wash Squash
- Slice 1/8″-1/4″
- Peeling is not Required
- Sanitize Trays and Place Slices on Trays
- Dry at 125*F-52*C until Leather Feel
- Can take up to 12 Hours to Dry Depending on Humidity
ZUCCHINI SQUASH
Zucchini Squash is better dried if you select young squash that has not formed seeds otherwise seeds are removed as they do not Dry Well. To Dehydrate:
- Wash
- Peeling is Not Required
- Remove Seeds
- Slice into 1/8″-1/4″ Slices
- Sanitize Trays and Place Slices on Trays
- Dry at 125*F-52*C until Brittle
- Can take up to 9 Hours to Dry depending upon Humidity
Zucchini Squash can be used Shredded in Breads, Sliced and used in Lasagna, Chopped Raw in Salads or Dried as Chips or Grilled or Broiled Topped with Olive Oil, Salt, Pepper, Garlic, Basil, Parmesan Cheese, Tomato, or Crumbled Cooked, Bacon as Toppings or make up Your Own Toppings. Use Dried, Broken pieces in Soups. Delicious
